Last week I made these delicious oven-roasted tomatoes and they were actually divine!!!! If you like tomatoes you need to try this! It is extremely easy, really quick and of course tastes amazing!! Heres what you will need:
- 2 field tomatoes (nice and ripe!)
- Olive Oil
- Melted Butter
- S&P
- Garlic (chopped up really finely)
- Parmesan cheese (grated)
Cut each tomato in half. Put them in an aluminum pan so you can throw the pan out once they are done cooking! Drizzle each tomato half with some EVOO and season with some Salt and Pepper. In a bowl, melt about 4 tablespoons of butter and once it has been melted combine it with the finely chopped garlic. With a brush, put this garlic/butter mixture on top of each tomato half making sure that each tomato has a good amount of garlic. To finish, sprinkle each tomato with some parmesan cheese and throw them in the oven at 375 degrees for about 10 minutes or until you see the cheese getting nice and golden brown.
You can serve these tomatoes as a side dish to a nice steak, chicken breast, or any other meat for that matter. If you are a vegetarian, these tomatoes will surely satisfy your hunger!!
