BBQ Chicken Breast with Lemon & Olive Oil

This chicken is too easy to make & takes no time! Its super delicious on a hot summer night and goes well with your choice of potatoes, rice or veggies on the side!! All you need to do is BBQ 1 pack of boneless, skinless chicken breast until its done to your liking. In the meantime, squeeze the juices of 1 and a half lemons & mix it with about 4-5 tablespoons of olive oil. Once the chicken is done on the grill, pour your lemon & olive oil sauce over top of the chicken & its ready to be served!

Spinach & Rice AKA Spanokoriso

This was one of the dishes I made last night. Its nice a light and is packed with Iron from all the Spinach! Its so delicious and fresh tasting. I usually sprinkle some freshly squeezed lemon juice over the rice when Im ready to eat and its heavenly!! Heres what you will need:

- 1 Bunch of fresh spinach (not spinach thats prepackaged)
- 2 cups of Rice
- EVOO
- Salt and Pepper
- 3 Green onions
- 1 Red chilli pepper
- 1/2 cup of freshly chopped dill

Fill your sink with cold water, cut the stems off the spinach bunch and then chop the spinach up into 1 inch think pieces. Chop your red chilli pepper, green onion and dill finely. In a large skillet, drizzle some EVOO and throw in all your chopped ingredients and let them wilt and release their juices.

Once the spinach has wilted you can season with salt and pepper and then add your 2 cups of Basmati rice and stir. Then, add 4 cups of water and lower the heat. Let this all cook together while stirring occasionally until you see that the rice has soaked up all the water. Taste it to make sure your rice is cooked to your liking and then its done!!!

When your ready to serve, have some lemons on your dinner table and try sprinkling some lemon juice! It adds a whole other dimension! :)

Navy Bean Soup A.K.A. Fasolatha

Unfortunately, I have come down with the sniffles and despite this AMAZING weather we are having right now I really felt like some nice hot soup to help cure my cold! I decided to make this Navy Bean Soup which is super hearty and packed with lots of protein!!! Heres what you will need:

- 2 cups of baby White Navy Beans
- 1 Carrot (diced)
- 1 Celery stock (diced)
- 1 White onion (diced)
- 1 and 1/4 of a cup of pureed tomato sauce
- 1 tablespoon of tomato paste
- Salt and Pepper

Fill up a large pot with water, put your beans in the pot and let them come to a boil for about 2-3 minutes. Once your beans are boiling and have been for about 2-3 minutes, spill this water through a strainer.

Wash the beans under some water and put them back into your pot, fill it up about halfway with water, add your onion, celery, and carrot and let everything come to a boil for about 45 minutes. (During this time, check it occasionally and make sure to top the pot off with water as the beans boil) After your beans have been boiling for 45 minutes, add your tomato sauce and tomato paste, some salt and pepper and stir everything together. Allow this to boil for another 30 minutes. Taste the broth to make sure it is seasoned properly, and try the beans to make sure they are soft and not tough. Once your beans are nice and soft you can turn off the heat, drizzle about 3 tablespoons of Extra virgin olive oil and your ready to serve!!

I usually have some black Kalamata olives on the table along with some bread!

Homemade Chicken Wings

Hey Guys!! I took out some chicken wings yesterday and thought that I'd bake them off in the oven and make for a great dinner!! I put the Chicken wings on a flat cookie sheet, put the oven on Roast at 350 degrees celsius and let them cook for about an hour and 15 minutes, or until you see that they are nice and crispy and golden brown in colour!! The only seasoning on the chicken wings is Salt and Pepper. On the side, I cut up some Yukon Gold potatoes in thin wheels, coated them with EVOO and Salt and Pepper and baked those off for about 30-40 minutes or until those too were golden brown and crispy. (you will probably need to turn them once so each side gets crispy and brown). I always incorporate a veggie into every dinner meal, so last night I thought I would boil off some Dandelion leaves. You can find them at most grocery stores and they are usually in the same area as broccoli, rapinni, cauliflower and so forth, they are delicious and so nutritious! Heres what you will need:

- 1 Pack of chicken wings (I bought mine from Longos, they have a great pack thats mixed with half drumsticks and half flats)
- S&P
- 4-5 Yukon Gold Potatoes
- 1 Bunch of Dandelion leaves
- EVOO

Place the chicken wings flat on a cookie sheet and season each side with S&P and bake on ROAST at 350 degrees for about an hour. Next, when your chicken wings are about 30 minutes from being done take your 4/5 potatoes, wash and cut them into thin but not too thin wheels. Drizzle them with EVOO, and season with S&P and lay those out as well on a flat cookie shit and bake until you see they are turning golden brown in colour.

While all of this is in the oven, take your Dandelion leaves (which come in 1 bunch and they are fairly long so cut them in half). Fill up your sink (make sure its super clean) with some cold water and throw the Dandelions in the water and swish them around a little because theres usually some dirt in between each leaf. Drain the water out of the sink, fill it up one more time, repeat the step of cleaning the leaves. In the meantime you can bring a pot of water up to a nice boil and throw in your Dandelion leaves. Let them boil for about 10 minutes. They need to cook for this long or else you will find they are a bit crunchy. Once they are done boiling, pull them out of the water and onto a plate. Drizzle with EVOO and some salt and your ready to serve!!

*I don't put any sauce on my chicken wings while they are in the oven because I like them nice and crispy. Once they come out however, you can toss them in whatever sauce you like. I personally love Franks, so I took some flats and tossed them in a bowl with Franks hot sauce and they were absolutely delicious!

Oven-roasted Tomatoes

Last week I made these delicious oven-roasted tomatoes and they were actually divine!!!! If you like tomatoes you need to try this! It is extremely easy, really quick and of course tastes amazing!! Heres what you will need:

- 2 field tomatoes (nice and ripe!)
- Olive Oil
- Melted Butter
- S&P
- Garlic (chopped up really finely)
- Parmesan cheese (grated)

Cut each tomato in half. Put them in an aluminum pan so you can throw the pan out once they are done cooking! Drizzle each tomato half with some EVOO and season with some Salt and Pepper. In a bowl, melt about 4 tablespoons of butter and once it has been melted combine it with the finely chopped garlic. With a brush, put this garlic/butter mixture on top of each tomato half making sure that each tomato has a good amount of garlic. To finish, sprinkle each tomato with some parmesan cheese and throw them in the oven at 375 degrees for about 10 minutes or until you see the cheese getting nice and golden brown.

You can serve these tomatoes as a side dish to a nice steak, chicken breast, or any other meat for that matter. If you are a vegetarian, these tomatoes will surely satisfy your hunger!!

Chewy Oatmeal-Chocolatechip Cookies!

For a little bit of dessert I found this cute little recipe for these mini oatmeal cookies! Its a healthier recipe that I found from this cookbook. Heres what you will need:

-  Honey
-  Peanut butter
- 1 egg
- Vanilla extract
- All purpose flour
- Quick cooking Oats
- Baking power & baking soda
- Chocolate chips
- Canola oil
- Melted butter

In a large bowl I mixed all of the wet ingredients together until smooth. In a seperate medium-sized bowl I measured out each of the dry ingredient components of this recipe. Slowly I added the dry ingredients to the wet while continuously stirring.

Once all of the ingredients have been mixed together it becomes a dough mixture. Take a teaspoon and spoon the dough mixture on a large cookie sheet. The recipe made 24 cookies & they were delicious!
