Hey Guys!! I took out some chicken wings yesterday and thought that I'd bake them off in the oven and make for a great dinner!! I put the Chicken wings on a flat cookie sheet, put the oven on Roast at 350 degrees celsius and let them cook for about an hour and 15 minutes, or until you see that they are nice and crispy and golden brown in colour!! The only seasoning on the chicken wings is Salt and Pepper. On the side, I cut up some Yukon Gold potatoes in thin wheels, coated them with EVOO and Salt and Pepper and baked those off for about 30-40 minutes or until those too were golden brown and crispy. (you will probably need to turn them once so each side gets crispy and brown). I always incorporate a veggie into every dinner meal, so last night I thought I would boil off some Dandelion leaves. You can find them at most grocery stores and they are usually in the same area as broccoli, rapinni, cauliflower and so forth, they are delicious and so nutritious! Heres what you will need:
- 1 Pack of chicken wings (I bought mine from Longos, they have a great pack thats mixed with half drumsticks and half flats)
- S&P
- 4-5 Yukon Gold Potatoes
- 1 Bunch of Dandelion leaves
- EVOO
Place the chicken wings flat on a cookie sheet and season each side with S&P and bake on ROAST at 350 degrees for about an hour. Next, when your chicken wings are about 30 minutes from being done take your 4/5 potatoes, wash and cut them into thin but not too thin wheels. Drizzle them with EVOO, and season with S&P and lay those out as well on a flat cookie shit and bake until you see they are turning golden brown in colour.
While all of this is in the oven, take your Dandelion leaves (which come in 1 bunch and they are fairly long so cut them in half). Fill up your sink (make sure its super clean) with some cold water and throw the Dandelions in the water and swish them around a little because theres usually some dirt in between each leaf. Drain the water out of the sink, fill it up one more time, repeat the step of cleaning the leaves. In the meantime you can bring a pot of water up to a nice boil and throw in your Dandelion leaves. Let them boil for about 10 minutes. They need to cook for this long or else you will find they are a bit crunchy. Once they are done boiling, pull them out of the water and onto a plate. Drizzle with EVOO and some salt and your ready to serve!!
*I don't put any sauce on my chicken wings while they are in the oven because I like them nice and crispy. Once they come out however, you can toss them in whatever sauce you like. I personally love Franks, so I took some flats and tossed them in a bowl with Franks hot sauce and they were absolutely delicious!
